
I have never really done “convenience.” From my morning espresso brewed on the stovetop to the loaves I slide onto the stone hearth, there are no push-button shortcuts in my day. I choose the less convenient way because I love the romance of tradition—but more than that, I believe the results are second to none. The outcome, whether it’s that morning coffee or a fresh loaf of bread, is worth every bit of the extra effort and is in no way inferior to a pod or a mass-produced commercial bakery. Baking with retained wood-fired heat is a constant, motivating challenge that demands my full attention, but that is exactly why it is so special.
Most bread today is built for predictable, identical output. Old-world baking is different. Our process is precise, but the brick oven always adds its own subtle touch. That variation is the very signature of traditional hearth baking—giving each loaf a depth and character of its own.
While I am managing the fire and the dough, this is truly a family effort. My wife, Carrie works full-time, but she is right there alongside me—running the vintage step van, hand-frosting our sourdough cinnamon buns, and beautifully writing out our chalkboard signs.
